Just because you're distilling and concentrating doesn't mean it's safe. The first drops and stream off of a still is called the "heads" and it contains more of the volatile chemicals, like methanol. Methanol can cause blindness and even death, which is one of the risks of moonshining. The 'heads' is separated from the 'heart' and the 'tails'.

@archangel9727 When you distill you're not taking the water out you're taking the alcohol out because the ethyl alcohol boils at a lower temperature. I think like 179°f (might be wrong) compared to water boiling at 212°f, and methanol boils at even a lower temperature than ethanol. Because of this gradient in boiling temperatures The methanol is stripped first then the ethanol, and then water. With other volatiles being collected throughout the process. If you merely want to take the water out you can do a process called 'freeze distillation', or in the colonial America's known as 'applejacking' (due to their use of hard cider), where you freeze and alcoholic beverage and then remove the ice layer on top. This can be done multiple times to increase the proof, but the higher the proof the colder it has to be to freeze the water out of solution.
