You're right, this video was a waste to watch because of the shallow analysis of bitcoin.

it's more than just architectural choice, there is significant trade-offs. if you look in-depth at the newer "energy-concerned" altcoins, all they do is centralize the control of their network. By your logic, a central bank managed digital coin is extremely efficient, but hey, it's purely just an architectural choice, right?

The idea is to target 1 block roughly every 10 mins - gives enough time to ensure the block is propagated the world over and to give ample time to all miners to have a chance to fairly solve the next one. If blocks are being made faster than every 10 mins (on average), the difficulty is algorithmically increased (and lowered if blocks are being made too slowly).

People use it because it is an extremely secure global protocol that doesn't rely on any trusted centralized bank or company. The rate at which the current blockchain grows is predictable because each block has a maximum limit in terms of size. There are currently 2nd layer bitcoin protocols in development where this doesn't be much of a concern anymore (We have learned that not all transaction need to forever be stored in the blockchain).
