Man, I get really nervous when people hold knives improperly when cutting. - Pinch grip is the most standard: using your thumb and first finger to grip the metal part of the knife (not the handle). Grabbing the handle provides no control or leverage. - The free hand should only expose your knuckles and not your fingers. Knuckles against the metal part of the blade and protect your fingers. - Seems counter intuitive, but dull knives are more prone to accidents. They'll tend to slip off and cut yourself where sharp knives will cut through the object.
