While restaurants technically are "brick and mortar" stores, they aren't categorized that way. Refers to retail stores.

To be fair, these seem like bad restaurant chain ideas: likely, overpriced and not really unique. Occasionally, I'll watch some of the Japanese restaurant videos. Just small places that have been in business for many decades / generations. More of the neighborhood type small businesses. I wonder if CCP China has those type of places / how they are doing.

Because they didn't study economics and don't believe in the price-elasticity of demand. They are simpletons: I'm short 20% in revenue, so I'll raise rents by +20% to make up the difference.
