Millions will die from malnutrition if the main source of protein is insects. All insect eating societies today are suffering from malnutrition. In any case, insects must emit greenhouse gasses too, but nobody wants to measure that. It could very well be that whatever greenhouse gasses a cow generates may not differ much from what an equivalent mass of mosquitoes produces. We can't compare one cow to one mosquito, because every mosquito meal would consist of hundreds of thousands of mosquitoes.
