  1. The most courageous part was being a foreigner opening shop in famously convoluted India. The Mexican part isn't so difficult, as beyond the furthest historical reach of Mexico (its borders into the 1840s) there's not much presence of actually tasty Mexican cuisine. (I grew up in California, so yes I am a snob about this)
