Plenty of people have expressed regret for not having the jab while they were dying in ICU and they've been recorded saying it. There have been news reports and video recordings. Sadly many are no longer alive to express any regret. I'm sure a lot of people with long Covid regret not having the vaccine also. That's not to deny that some people have suffered from side effects but in the scale of things the vaccines have saved more than they have harmed.
