  27. Ice cream sandwiches are designed to not melt easily! They are usually eaten when you're walking around on a hot day so why would you want them melting on your hand and clothes? Guar gum, cellulose gum, and xanthan gum are added to act as emulsifiers, thickening the water in the ice cream, making it chewier and slower to melt (but does melt eventually).
