I think you miss some fundamental concepts. There has always been a surplus, it’s just the distribution of that surplus and what medium that surplus takes. In hunter gather Society, it was measured in a surplus of time for most people, and then some food dolomites and capital (tools, weapons, shelter etc) for some. Agriculture meant more people in indentured servitude working the Land for land owners, needing they traded some of their surplus time to enable landowners to acquire bigger surpluses. Industrial capitalism took this to a whole new level, and effectively eradicated most surplus time for most people
