In the Middle East it was made usually with boiled honey over sesame seeds or over a nuts in some cases and it would be allowed to harden and it would be chopped and handed out and it's still done in some places today in here in the Middle East I mention this because it's one of those candies or things that have not gone out of style.

I find it interesting your cat's name is mishmish in Hebrew that means Peach... The way I used to do it without a candy thermometer when I was macrobiotic and making it with rice syrup is when it would come to a boil and if it comes off the spoon slowly you know it's done then turn it off and let it you know don't pick it up too quickly cuz you can burn yourself if you pick it up too quickly and then I would just pour it slowly out into well an ice cube tray. That's almost 30 years ago... Gosh do I feel old.

Some used to use drops of lemon or orange to give it a little extra flavor. I'm talking about your hard caramel kind.
