@OrbObserver the "confectioners sugar" near me has corn starch. (I just checked the bag to be sure) As usual, if you're trying to be specific, always check the ingredients list on the back and not what the front of the package calls it.

@OrbObserver not disagreeing, but for the record the brand on my shelf atm is Domino, so not exactly some random store/small brand. Idk if it's a regional thing or what, though. I just have always known it to have corn starch in brands big and small. It wouldn't be the first time a product was extremely commonly called something that wasn't technically correct, though.

I'm one of the people that is grossed out by separating yolks from whites with my fingers, but it is undeniably the most effective way to do it either pulling them out of the bowl afterwards or dumping the egg into cupped fingers and letting the white run through. I usually use other methods out of preference, but if I'm feeling lazy or impatient, the fingers get used and if it doesn't bother you it's absolutely the way to go.
