Um, I think the character of Mina Harker basically entirely refutes that point. She's at least as smart as the smartest male character and without fail, whenever the men treat her as anything less than a fully equal member of the group it goes poorly. If anything, the book is arguing that women can be just as mentally capable as men if they're allowed to exercise their minds like Jonathan Harker enables his wife to do, and that men, in trying to shield them from the real world, are doing more harm than good, no matter how noble their intentions are. The total consistency which the narrative meets sexism with disaster doesn't leave any room for that interpretation of author intent.

If you look at common wards against evil and undead (such as garlic, silver, and salt) you'll find at least minor antimicrobial properties to be common. There's even some symbolism packed into the exemptions to his restrictions (exact sunrise, noon, and sunset marking the moments when he can shapechange and the high and slack of the tide allowing him to cross water) as the moment in between periods of time giving him power mirrors being trapped in the moment in between life and death.

It's a weak defense as lack of knowledge and involvement put her in more danger, not less. Understandable, in an emotions overriding reason kind of way, but still a dumb idea.
