akbrs I do expect that leftover mash from getting oil is fed to livestock, but it's undeniable that whole soybeans are also used as feed and that forests have been cleared to make room for feed (including soybeans) to feed to livestock.

I say this as a meat eater and milk drinker, but the processing inefficiencies in just about all plant-based products are negligible in comparison to the losses in using that same produce as animal feed to create animal products. Depending on what you're talking about (milk and eggs vs beef, for example) you're looking at loosing something like 60-90% of your crop to the metabolic inefficiencies and non-food parts of the animal before even getting into all the other costs of keeping the animal alive. Pretty much anything you're willing to substitute in for an animal product even some of the time will be easier on the environment (likewise, subbing eggs and dairy for chicken and pork, or those for beef will also be almost guarenteed to reduce your enviromental impact). Also, modern flash-freezing methods are great at preserving food quality while preventing food waste, so all else being equal, buying perishables from the freezer section is also good.
