Why didn't you can the tomatoes or make tomato sauce? You can drop them in boiling water real quick, remove, and the peel slides off. Them you can dice them or can them whole for cooking. You can freeze or can the sauce or make salsa and do the same. You don't need a pressure canner for tomatoes. Just a pot deep enough to cover the top of the canning jars with water. Boil them, there are instructions on line for how long, take them out. You'll hear them pop and seal starting about 2 hours later. Jams and things should be pressure canned, but tomatoes are fine just water canning because they are so naturally acidic. That's what I do. I grow tomatoes specifically to can. It tastes better than what's in the store and because I control the ingredients it's healthier. Edit: I make Apple butter too. Canning is good for 1+ years as long as stored properly. Freezing is 1 year. Using the old method of making pickles vs the quick set ones, they'll last for years and so will relish. That's how we survived when I was growing up. Had 2 acres and we froze, canned, or dried everything we grew to be able to eat throughout the year. I never went hungry no matter how broke we were. Seeds are cheap and we used natural fertilizer. We had a tractor from the 50s to plow the field that's still working today.
