I HATE the electric stove in my new house. Hubby's going to run a gas line so I can get one. Electric takes too long to lower the temperature and I can't use heavy equipment because it will break the glass top. @Argedis 100% the quality would decline. There are dishes that just can't be cooked properly on an electric stovetop. You also can't use certain heavy bottomed pots and pans because it'll break the top. There are a few of my family's favorite southern and cajun dishes I've had to eliminate from cooking because I can't adjust the heat fast enough on the electric stove. It burns and moving it on and off creates too big of swings in temperature.

No. It's because they do want to. All new builds have electric stoves for a reason. It's extremely hard to find a house with a gas one. They want to ban gas cars too just like California has.

Tim, it wasn't the stove that wasn't cooking your bacon properly. It's cheap skillets that don't heat evenly and have hot spots. No Air B&B is going to stock good expensive cooking equipment because it'll be stolen. Just bring a cast iron skillet and it'll fry anything beautifully because it holds heat and disperses it evenly. Electric stoves would have the exact same problem with cheap cookware.
