  1. After I got married to my second wife, I came home and found she had stuffed all of the cast iron pans I had in the garbage can. They were rusted. I took them back out, gave them a once over with steel wool, then showed her how to season the pans. Short story, she became a cast iron nut after that, always looking for new cast iron things to buy. Cast iron can be great if you make friends with it. Of course you don't put it in the dish washer, but a quick brush in the sink and immediate dry does it, and they were the original non-stick surface. Seriously. Like you could make nuclear weapons in the things and they won't stick.

  3. I marinate with a spike (a skewer). More work, but it gets the marinade throughout the meat.

  4. Before I got a house, I had various gas and electric stoves. I hated the electric ones, which were just coils, but I love my current electric stove that has resistance under glass. Its a lot safer. You can put a paper towel under a pan and it gets burnt, but does not go on fire as a coil stove would. It has lag issues, of course, but they can be dealt with.

  5. Because ovens heat more evenly. Radiation and air heating are key. A skillet heats from the bottom.

  6. We have gotten really good at altering edible chemicals to extend their shelf life. The problem is, your body incorporates those chemicals into itself. So you are eating things that are going to be like cement, and stay with you much longer. And that's not good.

  8. Europe went through their raw food has bacteria crisis. The difference is that in America, we responded by heating and refrigerating everything to make it safe. The Europeans believed instead, that if your food is loaded with bacteria, it was prepared improperly., and so cleaned up the food at its source. Thus for example, Europe does not refrigerate their eggs.
