Securing the Suez would've changed things in favor of the Axis for sure, but Italy's problems went far beyond it's commanders' competence. Badly designed tanks, badly designed machineguns, the changing of standardized rifle cartridges (going from 6.5mm to 7.3mm back to 6.5mm in the time of 4 years created a logistical nightmare), the lack of willingness of the Italian Navy to secure the Mediterranean (especially Malta) and adequately deliver supplies to North Africa (Rommel's supplies landed all the way back in Benghazi, because the Italian Navy wanted the shortest route. Axis supplies had to be trucked hundreds of miles across open desert on the costal road, consuming fuel and leaving them open to Allied air attack), the lack of motorization meant most Italian divisions were playing catch-up to their fast moving German partners, the Italian High Command was full of British spies (British intelligence used to joke that it was faster for an Italian commander to wire London than Rome for his orders), lack of industry and resources meant that Italy never had enough of anything. Would've it really mattered if the Suez was taken if the Axis couldn't even hold it?

Germany actually had a quite a bit of problems. A glaring one was that they produced too many prototypes and changed the projection lines too often. The US settled for the Sherman for years, but that whole time the Pershing was undergoing testing that whole time. The Germans did a little of testing and then put their vehicles into full production. The bugs were worked out in the field and adjustments sent back to the factories. That's why Germany had dozens of variants for 1 vehicle model.
