Try using one in a power outage. I've had my power knocked out for days in the Winter. A gas stove/oven is a handy way to keep from freezing, while you keep from starving. The alternative would be having to run a gas generator for the furnace and stove. Any way you slice it, the grid is not trustworthy, so having other fuel sources and appliances that use them are necessary to a lot of us. Not to mention, gas appliances are typically cheaper to run. I have a gas stove, furnace, and water heater because of this fact. Having extra money every month is never a bad thing.

@sobuboss That's exactly the point. Federal laws like these typically screw over millions of people who aren't considered when writing bills. A law that doesn't negatively affect "Sondre's" region can cause people to freeze to death in the Northern parts of the US. It doesn't matter if induction stoves are "better" or if there are more efficient heating methods. When it's -10°F, the roads are buried under a foot of snow, and the power is out, what matters is living through it.
