  1. This guy is pretty dumb about food for a chef. EVERYONE KNOWS that modern food culture was developed as a consequence of the spread of regional foods, especially spices, world wide. Thus, Italy is associated with the tomato, which is of course a Native American food. The Irish are associated with potatoes ... which again, are a Native American food. Pineapple, which is eaten all over the world ... yes, it comes from Native Americans. Furthermore, the notion of discovery is legit. If this chef ever gets his act together, he should HOPE that people DISCOVER his restaurant. No, it doesn't mean that the he didn't create the restaurant, but when people who don't know about something find it, they DISCOVER it. So many TED talks are just utterly ... bad.
