  1. It is most unfortunate that staff in these restaurants still use bare hands to handle food, wiith this practice quite prevalent throughout China. My wife refuses to eat in such restaurants, and suggests they should minimally use gloves. She feels food safety should be of a high standard, no matter what the quality of the restaurant.

  2.  @xxxzzz9327  hands are washed continuously, but not in China. Haven't seen Hells Kitchen on Chinese TV.

  3.  @Boilthebunny15  but these chefs are constantly washing hands. I have seen a chef in a restaurant go out the back to an outside toilet, and when finiished, re-entered the kitchen without washing his hands. It is all about conditioning.
