  2. Answer is at 1:30. Buy a tabletop fryer. You get your temperature controlability and stability. Fish and chips? Fry the fish first and keep warm in an oven set low. Chips (fries)? A bit of a PITA but thems the breaks and it's just two batches (four fries) for a decent amount. I just throw old oil out in the yard. Something's going to be able to digest it. A fryer is not a specialized piece of equipment any more than an oven is. If you only fry once a year, you wouldn't want one but otherwise, a lot of foods cook well fried. They don't get yucky that quickly and most of the parts can usually be put in the dishwasher if that's what you look for (I once had one based around a glass bowl that was great but they stopped making it, sadly).

  3. I just realized you're cooking on electric. There's your first mistake right there. Get gas. Or induction. You poo-pooed your friend's gas in another video but it's just better for cooking. It just is (a few niche applications excepted).
