Thanks Justine. What a fascinating recipe. It is almost exactly the opposite of the 15th-century French recipe that I use - which calls for the milk, sugar, cinnamon (or nutmeg or mace, and butter to be boiled together with the rice so the kernels can absorb the flavours. Where sugars weren't available, chopped dates or figs provided the sweetness. I just use ordinary sugar though.
