Salt is a yeast antagonist tho so many cultures omitted it or only put it on the top just before baking.... but I know what you mean, bread without salt is pretty dubious and will taste strange. It also interacts gluten and the structure of the dough, so yes, it is of course useful and necessary, but you can technically make bread without salt, but you ABSOLUTELY cannot make it without yeast

Based on my dad's working at an industrial bakery, most "wholewheat" or breads with seeds and grains are just white bread with added stuff, even if they say "whole grain", only a small amount has to be whole grain, and because they are both flours, they don't need to specify how much is whole wheat....

As a New Zealander, I can tell you Americans that your Wonderbread tastes like (and even has the texture of) cake!! It's sooooo sweet! All your accessible breads are super sweet, even trader joes (which I had seen ppl say was ok by comparison) was too sweet for me!!! When I was in the USA i could only eat english muffins, because the cereals (even the basic ones like "shredded wheat") were sickly sweet. Absolutely bonkers.

There is a reason they say "the best thing since sliced bread"!! They complained about the withdrawal of sliced bread in WW2 america (they were going to use the metal for war effort) and it only lasted a few weeks because housewives flooded congress and the companies with complaints.
