  2. Joe O'Sullivan probably episode 2 or 7. The others all had pretty good final fights, episode 1 ended with a battle on 4 fronts, episode 5 had Vader vs Luke in cloud city, episode 4 had yavin, 6 has Endor, and episode 3 has two awesome duels going at the same time (episode three could make it on the Obi-Wan vs Pre-Suit Vader duel alone)
