I don’t know where you live but carrots that are not peeled have dirt that won’t come out the crevices except through light peeling. You don’t want gritty soup.

@tomm2812 not from the midwest. There is no brush that will work. Claylike soil in most places. Some places like England I notice have carrots already cleaned and peeled a bit when you buy similar to baby carrots in the US. You want to feed a person without grit. Also stored long enough you get gets roots growing from them but you can still eat them when you peel.

@EarlyAmerican it’s a rich person cooking for a poor person to give out of their back doors or send to local soup kitchen. Bacon/pork would have been more likely the meat used if any. I supped if they just slaughtered a cow they might use beef?
