+Ben Wagner Besides what Lucas Bons said already, I think I can give another idea of how it is.
Basically every attack or roll/jump you make, can't be stopped. So, if you attack an enemy and realize you'll miss.... you can't cancel it or move away. You have to finish your move. Which might even take longer if you don't hit anything (with big, heavy weapons, like a halberd). In this time the enemies can have all the fun on you.
And viceversa, once they started an attack they can't interrupt it, or move while attacking, giving you an opportunity to hit them, if you dodged the attack. That's why it's said to be fair.
You also really have to learn how each enemy likes to attack/battle. Even if you're high level and you go to beat some monster/boss, and just want to attack him straight away, you'll die without killing him(or taking more than 10% of the life of the boss) 10/10 times. While if you know what/how to do, you can beat them 10/10 times.
So, if you have the patience to learn, and the patience to attack when you should... it's not that hard really.
It also feels very rewarding to finally learn and beat some monster/boss, after you got mercilessly hacked into pieces dozens of times. Also finding the numerous secrets. This is one of the reasons it's a great game.
