THATCHERS JOB was working out how to get more air into ice cream as ice cream is sold by volume so you can sell less if you can get more air into it. A friend of my mother, who worked with her at Leeds University in the early 80's, had previously worked in the ice cream industry with thatcher - this is why my mother would never eat Walls Ice Cream as it used to be made with pig fat. Walls do 2 things - pork sausages and Ice Cream ...!!! This was adamantly denied by Walls but was actually true at the time.
