I think you demonstrated what a layperson would look at when buying a knife sharpener. Points you are missing, is the angle of the knife sharpener... which can be 15 degrees vs 20 degrees, which make a big difference. In addition, you can strop the blade edge, and get an extremely sharp edge from any of the sharpeners. I was surprised the electric sharpeners didn't get the blade as sharp as the factory edge, since that prob took off the entire dull edge (maybe due to having a burr on one side of the edge).
