My theory is that traditional heroes often are a bit too "ideal", sensitive, and good-hearted to be really called human, and because they often are written to just fight the evil or solve an conflict. With villains however, it's interesting to see what could have turned them to the evil creeps they are, and wonder if they really have something good inside. It's also interesting and sometimes shocking to see an actor play an villain if you know him/her since the actor often becomes the complete opposite of his/her usual self
