I used to make deliveries, and pick up freight from a meatworks many years ago. I was shown around the slaughter floor and through the processing areas. I have seen these bolt guns in use up close. The meatworks slaughter floor was above ground, and there was a crush at the top of a ramp. Cattle would be hit by the bolt gun, then a hook attached to a chain was driven between the achiles tendon and bone on one leg. The beast was then hoisted upside down and was carried via a chain conveyor up to another level. The conveyor crossed an access road and was open on one side. You'd often see cattle that hadn't been properly killed kicking and struggling, upside down, as they went up the conveyor.

@mattheweurt26 Cattle that fight the hook and sometimes come off the hook (which has happened at that meatworks) aren't having spasms. I think you missed the "...many years ago..." in my comment. It was the 90s. Further, it wasn't a small meatworks. This was an Australian Meat Holdings abattoir, one of the largest meatworks in the state at the time. They processed many hundreds of head per day during the season. Yeah, the cattle I saw weren't spasming. The cattle that were having spasms were usually still by the time they reached the processing floor.
