Ian, a chef can make everything, but some like to specialise in a particular style. The cake set hard due to the powdered sugar aka Icing Sugar. First attempt is the best lesson. See if you can find the much finer coconut, then Ian won’t have coconut stuck in his teeth. 😁 Also, we cook them whole, once baked, the sponge is cut in half horizontally, then jam and whipped cream added just before serving with a cup of tea. Yum!

Caster sugar is finer than regular sugar but not as fine as powdered sugar. You can still see and feel the crystals, they’re a similar size to regular salt. Powdered sugar would require less. An Australia cup measures 250ml liquid. Same size for dry ingredients too. Remember you made a half batch, did you use a smaller baking tin? I know you had less flour and powdered sugar would have been trying to set as soon as it got wet.
