Edward Dutton, in his book 'Islam: An Evolutionary Analysis', claims that islam, if followed strictly, suppresses phenotypical intelligence. Wether it's getting up at inconvenient times to pray, causing chronic sleep deprivation, to abstaining from food and water during daytime while fasting, to defining intellect first and foremost in terms of rhote memorisation of holy scripture, and corporal punishment of children, all to some degree suppress the potential for intellectual development within the bandwidth that one's genetics allow. Another factor might be that islam allows less leniency regarding its own doctrines, meaning they close themselves off from newly developed knowledge if it runs contrary to islam, whereas Christianity and Judaism allow for much more mental gymnastics to allow both a pursuit of traditional religion as well as embracing new technological and social insights.

Intermittent fasting while stuffing down calorie-rich fatty and sugary food when you are eating (twice a day) is very unhealthy. Not only because of fluctuating blood glucose but also because they increase the risk of excessive caloric intake. You'll eat twice a day, and especially during the evening you'll eat while being very hungry. This is just a recipe for overindulgence and that's a separate issue from the very unhealthy food generally consumed during iftar celebrations.
Moderate caloric deficits (10-15%) with a high protein diet including tons of leafy vegetables are healthy for weight loss without losing muscle fibre but that has nothing to do with what Muslims eat during Ramadan.
Also, going thirsty will mess up the electrolyte balance and this leads to further problems, like ineffective excretion of waste materials that the body gets rid of via urine. Dehydration even causes hallucinations and if you're slightly dehydrated you won't experience hallucinations but do experience a drop in mental clarity.
Ergo: taking part in Ramadan suppresses intelligence. Diabetes and obesity rates among Muslim populations who have easy access to food are sky high. The same diet that causes you to be metabolically unhealthy also suppresses IQ.
Also, you're wrong about the second issue. Per capita major innovation levels peaked in Victorian Britain around 1870 at a time when almost everyone was a member of the Anglican Church, and the theory of evolution, which is directly contrary to the creation myth in the Bible, was thought up during this period as well and quickly gained mainstream support even from people who were themselves practicing Christians.
The track record of islam is far worse: Muslim fanatics destroyed the library of Alexandria in the 7th century, ordered by Caliph Umar. The Catholic Church censored books but, by and large, didn't have them destroyed. They even kept copies of censored books themselves, and copies of the Greek classics were maintained and studied by monks and theologians.
Both Judaism and Christianity allow any part of the Bible except those which are explicitly about God giving laws to His adherents, to be seen as proverbial or mythical in nature rather than literally true. Except for a few groups (like the Old Order Amish) Christian and Jewish populations are all technophilic.
Nobel Prize winners skew heavily towards Ashkenazi Jews, even though this trend has been declining. Arab and other major Muslim populations are heavily underrepresented among Nobel Prize winners.
