Also: why not? It's the most dramatic and dynamic place for a fight. Story-wise we know Vader gets burned, and they're there because he went to kill the Separatist council anyway. But the fact is, it's a way more interesting place to fight than in a big forest like every Star Wars fan film (and almost every Disney lightsaber fight, at this point)

This is exactly why right off the bat the Disney trilogy fucked up. It immediately destroys everything the heroes were working towards and achieved in the OT, by both having Luke's academy wiped out in a narration, and effectively destroying the New Republic 30 minutes in just so it could reset the status quo to "Empire vs Rebels 2: Electric Boogaloo". Having Palpatine come back is the final nail in the narrative coffin.

See, even you say "2 out of 3" proving it's not so objective now is it? Return of the Jedi is also really, really great but people get too caught up with teddy bears.

@creed8712 Whenever someone says "[insert section] of Star Wars is the only consistently quality part" it usually means it's the only part they've consistently interacted with. When you dive into the full breadth of things like the Star Wars EU, the majority of the time it's good, sometimes mediocre, and occasionally really bad. Which is honestly better than most expanded media of a franchise. For instance, we can immediately 'disprove' that Star Wars games are consistently quality on technicality because of all the various mobile and trash shovelware that was made over the years, much as many dismiss comics and books because of the dregs that were pumped out at times as tie-ins or filler to the actual mainline products instead of paying attention to the actual big creations of the EU (both Legends and Disney Canon) that were legitimately fantastic on a regular basis.
