A lot of it really comes down to the way you're raised and the culture you're immersed in, which maybe some people might not want to admit but the reason an enthusiast would say stuff like "soul" or care so much about the engine is because their parents, friends or TV they watched as a kid repeated that idea which is why people tend to be fans mostly of the cars of their youth. For me of course that's impossible because I was an early 00's kid and it's literally impossible to be fans of those cars. I personally think there is no real tangible difference between an automatic ICE car of today and an electric car. Most of the sound of the ICE car is now fake, you have no mechanical control over the powertrain either, and you're just as screwed when the electrics go wrong so with or without it being an EV, I doubt that the real experience of an ICE vehicle would be there anymore if it wasn't for Nostalgia. It might all be fake, but at least there is a V8 under the hood. For me, what makes me a car enthusiast is the modification, the joy people get out of their own cars, the ways they help your life, and appreciation of the engineering and design work that went into them with every touch. The engine is mostly an inconvenience to me, because I don't own my own garage. At the end of the day, we are still in the extreme infancy of modern EVs, and although technology will obviously improve, the big change will be the gradual letting go of the nostalgia driving enthusiasm which is the real driver. Kinda like how you don't actually like how that one ice cream flavour tastes, you just like the feelings it brings back.
