You can make models say anything you want, but it's also easy to continuously tweak them to line up with real world data. I don't know why this wasn't done, especially with countries spending billions every year on pandemic responses. Apparently, when these things are manufactured, they do whatever to generate the protein, but concurrently they get a lot of fragments of incomplete or malformed proteins. A spectral analyzer is used to identify the percentage of the good protein vs other fragments. Bad or rejected batches are based on a too low number of the desired protein being present. Nobody knows the affects of the other misinformed protein particles.
