  1. I just wonder since you never add any water after setup - is it better to never open the jar unless absolutely necessary? I would expect doing so would lose a lot of precious moisture from the "atmosphere" that has developed in there. Either way this has been one of the most unexpectedly fascinating videos I've ever seen - excellent job.
