@omarlittle-hales8237 Cows can't digest cellulose. Mammals can't break it down. What chewing the cud is for is to get a second pass at the nutrients in the grass. To absorb the nutrients they missed when they first ate the grass. Cows and other livestock pass cellulose and lignin just like humans do. It might have as much to do with gut health as bulk fiber (dark green leafy veggies, e.g.) does for us. It makes food pass well through the gut. Which brings up another point. Humans have no rumen like cows, goats, and sheep. Nor do we have a big appendix like rabbits do to store grass they ate. These organs are for breakdown of nutrients in plants. But we have no comparable organs to get the most from our food. I'd like to see some research on this, but I'll bet that vegetarian/vegan eating —while perhaps noble —does not save much energy compared to the raising of livestock for human consumption. Humans must eat more vegetarian bulk than a person eating an omnivorous diet because we don't get a second pass at the food. I think our best bet is to learn how our digestion works and learn to be satisfied with less food. I'm learning to modify my diet for diabetes, and after a month now I've already felt a difference. Not so much a greater energy as satisfaction with the recommended serving size of each food I eat. I'm quite amazed. Eat for your own reasons and needs. I eat for my reasons and needs.
