Always loved Campbell's Bean with Bacon soup, sadly cannot get it in the UK anymore.
Any chance you could do a recipe to follow on from Campbell's so we can do it at home.
I have tried for years to replicate it without success.
Usually we use haricot beans, soaked overnight, water changed, then more water added and cooked as long as it takes, when soft we add fried onion with some left in the frying pan for later, paprika, cayenne, black pepper, tiny bit of sugar, chopped diced cucumber (they had celery i think), then when all is cooked, we take 2 or 3 ladles full and put them into the hot frying pan with the rest of the onion, cook them up together then add the whole lot back into the main saucepan of beans, making sure all the liquor goes in with them. Heat it up and then serve with salt to taste and bread. We also sometimes cook it with bacon hock, or pork My great uncle brought that with him when stationed in Germany and he said he got it from some Serbian workers he shared food with, they called it Djuvec.
Since then i have experimented with adding some smoked paprika, potato mash or powdered potato, fine chopped carrot, vegetable bouillon cube but it never quite matches the Campbells. I even looked up the original recipe but we still cannot get the right taste.
Any chance you could try.
