Science doesn’t actually prove anything to 100% certainty because it leaves itself open to new and better information. Now with that technicality out of the way, let’s address your questions.
To the best of humanity’s scientific knowledge, on the scale of the universe, entropy only increases over time. The second law of thermodynamics isn’t just a claim. Since we have no data that suggests otherwise, we treat it as a fact.
Again, regarding black holes, the information shared in this video is accurate to the best knowledge available. And the study of black holes isn’t just theoretical.
Calling gravity a claim is just plain incorrect. We may not know what the exact mechanics of its operation is, but it’s existence and the fact that it causes mass to be attracted to mass is undeniable.
Lastly, the atmosphere doesn’t just disperse into space because the force of gravity prevents it from doing so. Some gas does make it into space, but it is a negligibly small amount. Now if there were no other forces acting in the gas, it would just disperse infinitely.
