This might sound like a hard thing but just tell her based on previous variants including Delta which is still circulating about 10% chance she dies if she catches it and about 1% if vaccinated based on her age(Omicron probably less). Then just don't worry about it, at that age she could die tomorrow from anything. In other words respect her wishes even if it ends up killing her. I say that based on her being very old. Hope you don't find my comment offensive and best of luck.
