It's all about the antenna. If you don't have a fairly large garden, then you're not going to do as well as those who do. There's a lot of electrical noise around houses these days, so even an attic antenna can be problematic. Some people here have said, "Spend a lot of money on an antenna". No. A piece of wire will do, but it has to be the longest and highest you can get it. If you're in a flat, I would suggest sticking to listing to WebSDRs. The University of Twente in the Netherlands everyone's default site as it's a good one. If you really do want to pick up stuff from over the air, a small antenna worth looking at is the MLA-30, available from AliExpress for under 30 quid. It will be better than the telescopic antenna on top of a radio, but it won't work miracles.

The problem is, all these radio recommendations work roughly the same, with a little bit of variation. It's all down to the antenna connected to it, and perhaps to get out into the countryside away from sources of interference, or at least get the antenna as far from dwellings as possible. Even an expensive ham radio setup like the Icom 7300 which Lewis has is useless without a decent bit of wire connected. From previous comments, Lewis has 25 metres of wire down his garden.
Forget "scanners" in this context, they are radios for VHF and UHF, they are generally not for HF (short wave). They will pick up the local taxi service, VHF airband and a few other things, but no long distance HF stuff like in this video.
For a radio, if you did want one, most of the recommendations somewhere in the comments will work fine, as will, if you have a computer/laptop, a cheap SDR "dongle" (again from AliExpress) with an "upconverter". This, for about 30 quid, makes an outstanding receiver, but you do need some technical knowledge, or some help, in setting it up. Again, you'll need a decent antenna. You mention the ATS25X2, I don't see why it would need extra firmware, it's a general coverage receiver with SSB, that's all you need. But, again, without a decent antenna, it's nothing.
