Well, right out of the gate, I agree with you. I would have a difficult time convicting Baldwin. But, there is a slight difference between a paintball gun and a real gun. There'd be absolutely zero expectation that a paintball gun would ever have any kind of fatal round in it. But, for a real gun, it's a possibility that it has a real round in it. So, the manslaughter charge applies to the concept that he was negligent in not taking proper precautions, and never pointing the gun at anybody. Manslaughter doesn't require intent. It means someone was merely not taking the cautions that they should have been taking. Again, I don't want to sound argumentative, because I think I'd probably not convict him either. But, you asked a question, and I wanted to provide an answer.
