  1. In Australia we call the foam 'the head'. I prefer a beer to have a head on it when poured but if it disappears then I don't worry as it often just that the glass wasn't rinsed properly. We even have a brand of beer glass called a Headmaster that has etchings in the bottom of the glass that gives a consistent head. When I lived in China I got used to beer that does not have a large head as most of the beer in China does not form large head , if any head at all! It gets interesting when you are taking beer from a barrel as the dispensing gun and the gas pressure can make a significant difference.
