The reason for the delay of a second or two after the punch before the victim collapses is this: the liver is a big gland which stores various hormones, as well as a detox-filter which removes toxic chemicals from digested food before the food gets to the bloodstream. When the fighter hits the liver, the punch squeezes the liver and makes it release lots of toxic glop into the bloodstream. Then there's a second or two delay before the toxic glop gets to the brain. The brain reacts by partly shutting down, and the fighter falls and lies helpless until the glop can be re-filtered out of the blood.
