This video is largely ridiculous, the source of your protein is mostly negligible, what's most important is hitting your target. Protein deficiency often results in stunted growth, hair and skin changes, muscle loss and swelling. It's very noticeable and is not a widespread issue

Vegan foods are typically not calorie dense, so it's a lot easier to eat a lot of food and make up the protein difference as opposed to heavy meats. Vegans and vegetarians in general, in my experience, also care a lot more about what goes into their body and are more vigilant about their diets
