Until the AI can start producing a mode to get around, i.e. bodies that allow them to fly/walk/move and interact with the world and all of us, they are very limited in what they can do. Does automation affect me making vodka fuel and growing food? Yeah, some but until they can come attack me they don't have much reach over me. I bet the video games will be freakin wild with AI.
There is a consideration you've missed Joker, most people have. They don't want us to have myriad choices like we do now. They don't want what is best for us. Its much easier to be profitable when your livestock only eats one type of food, rather than several types you have to grow or buy.
The size of the herd matters too, 10,000 cattle is much more work than 300 cattle. I grew up with 100 to 300 cattle and around a thousand hogs at any given time. The more you have the more work it is and the more you have to feed them. You only feed them one thing, because they don't really need much variety to get ready for market. Feed them the cheapest thing you have that works and they will eat.
Fewer, consuming a very narrow range of products, to maximize profits. They don't need all the busywork jobs, and they won't need mechanics and other manual labor jobs either, because with vastly smaller populations they won't be allowed to travel and they won't produce as much waste.
So the only question will be, are they building a zoo or a farm? Because farm animals all meet the same end.... I wonder what they will do about all of us out here in the woods who can support ourselves.
