Critical Drinker, I think what happens is that it's a very powerful thing when an adult loses his temper or has an outburst, and it has an immediate effect on the audience. So writers are not subtle and they sit around and say "Spock is really angry, and so if he has an outburst as a Vulcan, it's REALLY powerful". So they make Spock act completely out of character and they high-five each other thinking "Wow, this will be an AWESOME moment when Spock loses his s***!". It's like getting a sugar high, it's cheap, quick and doesn't require any setup. So they do it over and over again in the same movie so it actually has no effect on the audience.
