That seems pure distillation, not like making for example liquor, where there is major creation of alcohol from sugars added..
For example Kumquat liquor starting with a number of kg of the fruits, in their skins pierced several times , a bottle of Vodka or gin, ideally something of neutral flavour, adding kg of sugar in a large strong glass container/jar. Sealling the container. Now over a period of a year or more, store cool and dark. Periodically turn/swirl the container, if all sugar used add more. At some stage the liquid will become thicker/more viscous. At end of desired storage, over 12months or more decant the liquid through filter paper., make sure to drain remainder of fruit too, even light pressing. Discard the fruit pulp. Bottle the liquor and store again cool.
After a further 12 months sample result, it continues to improve with age. It may turn darker colour even brown with age, especially after period of some light exposure. Alcohol content will go way up, beware of local laws related to making alcohol you may face legal consequences.
Similar should work for many types of fruit.
