When sugar reaches your small intestine, an enzyme called sucrase splits that sucrose into glucose and fructose, which is chemically identical to HFCS. Sugar and HFCS are the same chemical; only one is much cheaper, so much so that not only has it replaced sugar in most commercial recipes, it has been added to foods that previously did not have sugar.
