Because the latitude lines are artificially positioned so that they don't meet. If two people traveling along the latitude were walking in a straight line in regards to curve of the earth, then they would meet up at some point just as though they were traveling along the longitudes. You can demonstrate this by taking a ball and drawing straight lines long it's true curve.

Take a ball, put it up against the marker and turn it in the direction away from you until you come back to the starting point. No mater what position on the ball you start, as long as you turn it in the same direction away or towards you, the line will be straight. Well, maybe not perfectly straight, that part depends on how steady your hand is.

A straight line is straight as a matter of perspective. While the theory of a straight line being nothing more than a segment of a very large circle, is valid; this is arguing practical sense against theory. Continue to long and people will begin to see the theory arguing guy a fool of fools and an educated idiot. The straight line I described shows how, regardless of where you start on the ball, you will eventually meet the starting point if you do not change your direction on the ball. Thus, the parallel lateral lines are intentionally fabricated. The purposes of the longitude and lateral lines is to assist in navigation. Knowing where they are in regards to the lines, coupled with star charts, various astronomical instruments such as the sextant, a and a compass and a time clock, enables the navigator to direct a ship to a given port or position on the seas. The lines, despite circumventing the glob and therefore being a great circle, are, for practical purposes, lines that lead you on a straight course and therefore are straight.

@gecko8621 You are assuming that everyone that claims to be a scientist is basing their belief system on experiments and studies. That is idealistic at best. Just as there are plenty of people claiming to be Christian, yet conducting their lives in complete opposition to their claim, there are those in science that conduct science in complete opposition to what science is. When a person is allowing the experiments and study to prove or disprove the hypothesis; you have genuine science. When a person is manipulating data to force the experiments and study to prove the hypothesis; you have religion.
